Serves SERVES 6 :
300 g frozen haricot beans
1 onion, quartered
3 cloves garlic, peeled and germ removed
3 ripe tomatoes, quartered
1 green capsicum, diced
3 tblsp olive oil
1 bay leaf
1/2 tsp Espelette pepper
1/2 cube of chicken stock diluted in 600 ml water
Salt
Pepper
Flat-leaf parsley
Fresh thyme

Place onion and garlic in metal bowl and run EXPERT programme, 20 seconds/speed 13 (without heating).

Push down if necessary. Brown with 1 tblsp olive oil and run EXPERT programme 3 minutes/speed 2A/120°C.

Add all ingredients except thyme and parsley, then run EXPERT programme, 35 minutes/speed 1A/105°C.

Remove cap and cook for another 10 minutes if necessary. Ideally, the beans will be tender but not mushy.

When beans are cooked, sprinkle with snipped parsley and thyme.

Chef’s tip

If you use dry haricot beans, soak for 24 hours in cold water beforehand. The cooking time can vary considerably depending on the type of beans.
