Serves SERVES 6 :
1 garlic clove
½ banana shallot (25 g)
1 kg ripe tomatoes
3 tblsp olive oil
1 bunch basil
½ tsp salt
Pepper, ground mix
Ciabatta bread

Put garlic and half a banana shallot in large transparent bowl. Chop using FOOD PROCESSOR programme.

Quarter tomatoes and remove seeds. Add tomatoes, basil leaves, salt, pepper and olive oil to transparent bowl. Chop ingredients using FOOD PROCESSOR programme and PULSE button.

Serve bruschetta on slices of Ciabatta bread with a few leaves of basil.

Chef’s tip

You can mix the bruschetta with diced mozzarella or Parmesan chips.  You can also rub the slices of ciabatta bread with a half a clove of garlic and use a little basil or chilli-flavoured olive oil.
