|110||g walnuts (optional)
|250||g (2 large) carrots,
|washed and peeled
|175||g self-raising flour
|175||g light brown sugar
|2||tsp baking powder
|175||ml light oil (not olive)
|1||Preheat the oven to 180°C (170°C fan, gas mark 4). Lightly butter a 23cm cake tin.|
|2||Install the food processing bowl and blade. Add half the walnuts and chop for about 20 seconds using the FOOD PROCESSOR programme. Set aside.|
|3||Remove the metal blade and install the transparent bowls with the 4mm grating disc. Grate the carrots into the midi bowl using the FOOD PROCESSOR programme. Set aside.|
|4||Remove the transparent bowls and fit the metal bowl. Add the flour, sugar, baking powder, oil, cinnamon, eggs, whole walnuts and grated carrots.|
|5||Select the PASTRY/CAKE programme. With the machine still running, after 1 minute, remove the cap and add the sultanas.|
|6||Pour the cake batter into the loaf tin and bake for 1 hour or until a cake tester comes out clean. When the cake is cool, spread the frosting on top.|
added 1/2 t cardomom, 1/2 t salt, and used half of frosting (froze half for next time): delicious! Even better when used pineapple and dates instead of sultanas, baked 24 cupcakes at 170 fan forced x 22 minutes.
This is a really delicious recipe. After cooking, I added a glaze... 40g dark brown soft sugar, juice of 1/2 orange, 1 dessertspoon lemon juice. Gently heat in a small saucepan, till sugar is melted. When the cake comes out of the oven, while warm and still in the tin, stab it all over and spoon the syrup evenly over the top of the cake. I topped with 500g Mascapone, whipped together with juice of 1/2 orange and 30g caster sugar.

Highly recommended. I used 75gm of coconut sugar instead and didnt bother with the frosting to cut down and calories and it was still delicious.
Came out perfectly. Just divine, moist and delish!
Very good cake. Used 100g sugar and 100ml of oil and 3 carrots instead. Yummy. Didn't have sultanas but substituted it with cranberries.
