Serves 4-6 :
500 boneless chicken breasts
300 ml cooking oil
50 g cornflakes
30 g plain flour
50 g breadcrumbs (see recipe)
2 tsp ground paprika
1 egg
1Fit the food processing bowl with the mini bowl. Add the cornflakes, flour,
breadcrumbs and paprika. Process for 30 seconds using the FOOD PROCESSOR
then set aside.
2Beat the egg in a bowl.
3Cut the chicken breasts into 4cm pieces. Dip in the beaten egg and then roll in the
breading mixture.
4Heat the oil in a non-stick sauté or frying pan. Do not allow it to smoke.
5Carefully slide the breaded chicken pieces into the oil and cook for 2-3 minutes
on each side until golden brown. Serve the chicken nuggets with cocktail sauce
(see recipe).

Chef’s tip

If desired, you could add 60g of sesame seeds to the breading.​

Easy and yummy. I made a large batch for the next day's outing, to find my teenagers had eaten the lot! Hence they were a hit with the family

The kids loved these nuggets. Breadcrumbs were quick and easy. The mini bowl was used, however it was necessary to clean larger bowl as well after processing the crumbs.
