160 | g sultanas |

1 | cup orange juice |
1/3 | cup brandy |
1 | cup plain flour (sifted) |
1 | cup self raising flour (sifted) |
1 | tsp cinnamon |
1 | tsp mixed spice |
1 | tsp nutmeg |
250 | g unsalted butter - melted and cooled |
1 | cup brown sugar |
3 | eggs lightly beaten |
1 | Place mixed fruit and brandy in airtight container and soak 1-2 hours or overnight if possible. |
2 | Rease a 1.5 kg pudding bowl and line the base with greased baking paper |
3 | Place soaked fruit in metal bowl and run the EXPERT program 10 mins / speed 1A / 50 |
4 | Add the remaining ingredients and run the EXPERT program 4 mins / speed 3 / no temp. |
5 | Pour the mixture into the greased pudding bowl leaving an inch at the top of the bowl to allow for the pudding to expand. Place greased double lined baking paper on the top of the pudding. |
6 | Fill the cleaned metal bowl with 500ml water and place the pudding bowl in the steamer basket and close the lid. |
7 | Run the STEAM program for 2 hours and check water level before repeating the steam program for another 2 hours. You may need to run the STEAM program for another hour. Check the pudding with a skewer, if it comes out clean the pudding is cooked. |
8 | The pudding will take about 4 hours to cook (about 2.5 hours per kg) |
9 | Once the pudding is cooked, rest for 10 minutes and then turn onto a serving plate and enjoy with brandy custard |

Delicious pudding. Had enough pudding mix and baked half of it in the oven. both were divine, but the pudding took 1st place. My children loved it! we had it for Christmas dinner with amagimix custard.
Was a good pudding. I precooked it (a week early) and steamed again on the day. My pudding tin didn't fit in the steamer so steamed it in a pot.
Does this pudding work if it is cooked, stored and reheated on the day?
