Serves 8-10 :
160 g sultanas
160 g raisins
160 g cranberries
75 g glace cherries
75 g orange peel (or 1 tbsp zest)
75 g lemon peel (or 1 tbsp zest)
1 cup orange juice
1/3 cup brandy
1 cup plain flour (sifted)
1 cup self raising flour (sifted)
1 tsp cinnamon
1 tsp mixed spice
1 tsp nutmeg
250 g unsalted butter - melted and cooled
1 cup brown sugar
3 eggs lightly beaten
1Place mixed fruit and brandy in airtight container and soak 1-2 hours or overnight if possible.
2Rease a 1.5 kg pudding bowl and line the base with greased baking paper
3Place soaked fruit in metal bowl and run the EXPERT program 10 mins / speed 1A / 50
4Add the remaining ingredients and run the EXPERT program 4 mins / speed 3 / no temp.
5Pour the mixture into the greased pudding bowl leaving an inch at the top of the bowl to allow for the pudding to expand. Place greased double lined baking paper on the top of the pudding.
6Fill the cleaned metal bowl with 500ml water and place the pudding bowl in the steamer basket and close the lid.
7Run the STEAM program for 2 hours and check water level before repeating the steam program for another 2 hours. You may need to run the STEAM program for another hour. Check the pudding with a skewer, if it comes out clean the pudding is cooked.
8The pudding will take about 4 hours to cook (about 2.5 hours per kg)
9Once the pudding is cooked, rest for 10 minutes and then turn onto a serving plate and enjoy with brandy custard

Was a good pudding. I precooked it (a week early) and steamed again on the day. My pudding tin didn't fit in the steamer so steamed it in a pot.
