150 g raw almonds, peeled
1 clove garlic, peeled and germ removed
1 slice of sandwich bread
35 ml olive oil
15 ml white wine vinegar
500 ml cold water

Insert metal bowl in appliance. Add almonds, garlic and bread and run EXPERT programme, 30 seconds/speed 15 (without heating).

Pour in cold water, salt and vinegar. Run EXPERT programme for 1 minute/speed 12 (without heating).

Run EXPERT programme for 1 minute/speed 15 (without heating). During the programme, gradually add olive oil through opening. Once oil has been added, increase speed to 17 for the remaining time.

Serve very cold.

Chef’s tip

Add vinegar to taste.
For a thicker soup, reduce the amount of water.
Serve with a few drops of olive oil, grapes, melon or crayfish kebabs.
