Serves 6 :
2 leeks chopped (white part only, 350g)
300 ml milk
300 g goat cheese such as Stilton
4 eggs
100 g cornflour
4 tbsp crème fraîche
1 tbsp olive oil
2 thick rashers of bacon sliced into strips
15 g butter
salt, 5 peppercorn blend
1Preheat the oven to 180° (170° fan, gas mark 4).
2Place the leeks and butter into the metal bowl and run the EXPERT programme for 10 minutes /speed 2A / 98° and set aside.
3Put the milk and cheese in the metal bowl and run the EXPERT programme for 1 minute/speed 8/80°. Add the eggs, corn flour, crème fraîche, oil and a little seasoning. Restart the EXPERT programme (without heating) for 30 seconds/speed 11.
4Generously butter a gratin dish. Arrange leeks and bacon in the dish and pour the milk/cheese mixture on top. Bake for 35 minutes until risen and golden.
5Serve warm with a lamb’s lettuce or baby spinach salad.

Chef’s tip

The clafoutis could also be prepared using individual ramekins. In this case, adjust the cooking time.​
