Serves approx 40 balls :
500 g minced beef (pre bought or minced)
1/2 cup breadcrumbs
(made using the Magimix)
1/2 cup crunchy peanut butter
(can be left out if there are nut allergies)
2 teaspoons Vegemite
2 teaspoons curry powder
1 medium carrot grated
4 cubes Meredith Dairy marinated Goat Cheese (can be substituted with 1 piece of danish feta)
4 spring onions, chopped
1 squirt of tomato sauce
1Make your breadcrumbs and set aside
2If you're mincing your own beef, mince and set aside
3Grate carrot and set aside
4Add all ingredients into the Magimix food bowl and run FOOD PROCESSOR setting until everything is combined.
5Roll bite size meatballs and place on a lined baking tray
6Bake in a 200 degree oven for 15-20 minutes or until cooked through
7Serve with sour cream and sweet chilli sauce
