Serves 4 to 8 :
200 g crème fraîche
(minimum 30% butterfat), chilled
150 ml whipping cream
(minimum 30% butterfat), chilled
75 g caster sugar
2 passion fruits
1Chill the metal bowl and the whisk in the refrigerator for 30 minutes. Fit the whisk in the bowl and add the crème fraîche, whipping cream and sugar. Run the EXPERT programme, 5 minutes/speed 7 (without heating). The cream should be very firm.
2Add the pulp of one passion fruit then restart the EXPERT programme again, 30 seconds/speed 7 (without heating).
3Pour the mixture into a loaf tin lined with cling film. Cover and freeze for approximately 4 hours.
4To serve, turn out onto a plate, remove the cling film and drizzle the pulp of the second passion fruit over the top.

A lovely dessert. My modifications: 1. I used 2 passionfruit, but as I like passionfruit, next time will add 3 . 2. I made double the quantity and this was enough for a loaf tin. I made the raspberry sorbet to accompany. Everyone loved it.
