Serves 10 :
150 g almond meal
150 g softened butter
150 g plain flour
1 tsp baking powder
3 eggs
1 tsp ground cardamom
150 g light brown sugar + 2 tbsp
4 red plums (350 g),
thinly sliced
Vanilla icing, optional
1Preheat the oven to 180°C (gas mark 6).
2Put the almond meal, butter, flour, baking powder, eggs, cardamom and the 150 g of light brown sugar into the metal bowl and run the PASTRY/CAKE programme.
3Pour the batter into a buttered and floured cake tin. Press the sliced plums into the top of the cake and sprinkle with the remaining 2 tbsp sugar.
4Bake in the oven for 1 hour. Remove and cool for 20 minutes before turning out and set aside until cold.
