Serves SERVES 4 to 6 :
250 g polenta
70 g grated Parmesan cheese
+ 30 g for decoration
4 to 6 candied cherry tomatoes
150 ml double cream
4 to 6 tblsp pesto rosso
1 tbsp unrefined salt

Pour 850 ml of hot water into bowl, sprinkle over polenta and add salt. Run EXPERT programme, speed 3/100°C and adjust cooking time according to indications on packet.

Add double cream at end of programme, then Parmesan cheese. Run EXPERT programme, 10 seconds/speed 4 (without heating).

Serve immediately so that polenta remains creamy. Add a tablespoon of pesto rosso to each plate together with candied cherry tomatoes. Sprinkle with freshly grated Parmesan cheese
