Serves SERVES 4 to 6 :
600 g new potatoes, peeled
150 g onion
5 eggs
1/2 tsp baking powder
1 tsp salt
1 pinch pepper
Nutmeg (optional)

Insert transparent bowl into midi bowl. Cut potatoes and onions in half. Slice with 4 mm slicing disc using FOOD PROCESSOR programme and set aside.

Replace transparent bowl with metal bowl. Add 500 ml of water, place potatoes and onion in steamer basket and run STEAM programme. Set aside and dry bowl using paper towels.

Add eggs, salt, pepper, baking powder and nutmeg (optional). Run EXPERT programme for 30 seconds/speed 5 (without heating).  Add potatoes and onion and rest for a few minutes in bowl.

Heat oil in frying pan and cook tortilla to taste.

Chef’s tip

To season the tortilla, add onion, chorizo sausage or chilli as required.

ive never used baking powder or nutmeg in the tradional tortilla. you can also add roasted capsicum too.
