Potato, chive & goat cheese frittata

Serves 4 PEOPLE :
3 small potatoes (400g), peeled
2 tbsp olive oil
2 spring onions, chopped
2 tbsp roughly chopped chives
10 large eggs
100 g goat cheese
sea salt
freshly ground black pepper
1Preheat the oven to 220°C.
2Spiralize the potatoes using the SPAGHETTI cone. Cut into shorter lengths.
3Heat the olive oil in a large frying pan over medium-low heat. Cook the spaghetti for 10 minutes, stirring occasionally. Stir in the spring onions and chives.
4Whisk the eggs with ½ tsp salt and ½ tsp pepper. Pour the mixture over the spaghetti and stir a couple of times to evenly spread the mixture out; dot with small pieces of goat cheese.
5Bake for 10 minutes, or until the eggs are just set.
