Serves 4 :
2 chillies, sliced & deseeded
½ bunch coriander, washed
& roughly chopped
1 knob ginger, peeled & sliced
6 cloves garlic, peeled & sliced
1 onion, sliced
1 stem lemongrass, bruised & chopped
½ bunch Thai basil, torn
¼ cup Extra Virgin olive oil
2 chicken breast, skin off, diced
2 Kaffir lime leaves
2 zucchini, diced
2 tablespoons coconut sugar
1 cup tomato, diced
1 cup chicken stock
1 cup coconut milk/cream
1 tablespoon fish sauce
1 tablespoon soy sauce
1 teaspoon salt
1 bunch coriander
1Place chillies, coriander, ginger, garlic, onion, lemongrass, Thai basil & oil in the Magimix Cook Expert. Run EXPERT programme for 1 minute / speed 18 
2Wipe down the sides with a spatula. Run EXPERT programme for 5 minutes / speed 3 / 110°C & cook paste.
3When timer stops, add the remaining ingredients. Run EXPERT programme for 15 minutes / speed 2A / 110°C.
4When timer stops, add juice of 2 limes, serve with steamed rice.

yummy!! i just found the chicken a bit dry, i think ill try chicken thigh next time!

used speed 1A instead of 2A. chicken came out perfect with no shredded bits. Replaced coconut sugar with palm sugar.


Really delicious, but could be made with just a little less liquid (having said that, the amount of liquid used is probably more authentic).

One of the first things I have made. Followed recipe to the tee, tasted lovely however, chicken totally shredded, will try reducing speed next time. Lime juice is missing from the ingredients list too.

Lots of fresh flavour. A family favourite even with small children. I find chicken gets shredded easily so I reduce speed or put on simmer. I also make the paste in the Food Processor not the metal bowl (a double batch of paste is handy to freeze).


I LOVE this curry! Just need to add the Lime juice to the ingredient list. It's the one ingredient I always forget to buy!! ?


This is a winner if you like a tasty curry that is not Spicey hot.


Nice flavour but the suggested time and speed turned the curry quite mushy might try the simmer function next time


First dish I made when my machine was brand new. Have made it a number of times now. Just lovely!

A really lovely recipe.


Just lovely ! adjust heat by changing your chillies. I used two long green ones and it was quite mild. Next time I might use two birds eye red ones as I like a bit of heat. This is beautiful and aromatic and no artificial ingredients. Just the best gang !

Very good recipe. Only two ingredients I question; coconut sugar should be palm sugar ? And ginger should be galangal ? The rest was very spot on. The curry looks and tastes amazing !
