Serves 4 glasses :
200 g dark chocolate (70% solids)
500 ml whole milk
100 ml single cream
1Break the chocolate into pieces. Chop in the metal bowl using the EXPERT programme
30 seconds/speed 15 (without heating). Scrape down the wall of the bowl.
2Add the milk and cream; restart the EXPERT programme, 5 minutes/speed 3/90 °C.
Pour the hot chocolate into cups. Serve immediately.

Chef’s tip

You could replace the dark chocolate with milk chocolate. For a lighter version, replace the cream with milk.
