500 ml full fat single cream (30% fat content min), very cold
60 g icing sugar

Refrigerate cream and whisk for at least 30 minutes beforehand.

Cool bowl by placing a few ice cubes in bowl, run CRUSHED programme, remove ice and dry carefully.

Place whisk in bowl, pour in cream and icing sugar. Remove cap from lid and run EXPERT programme, 2 minutes 30/speed 7 (without heating). Depending on the cream used and its temperature, it may be necessary to run the programme for another few minutes, taking care that the cream does not turn to butter. The cream is whipped when you can see the imprint of the whisk.
