4 | large Zucchini yellow & green |
400 | g bacon |
1 | red onion, thinly sliced |
4 | cloves garlic |
¼ | cup Olive oil |
100 | g Butter |
4 | Eggs, lightly beaten |
200 | ml Cream |
¼ | cup Chives, finely chopped |
¼ | cup Parsley, finely chopped |
150 | g parmesan, grated |
1 | In the large clear food processor bowl, attach the spiraliser. |
2 | Spiralise the zucchini [FOODPROCESSOR], set aside |
3 | In a large non stick pan, sweat onion, garlic & bacon in olive oil until golden |
4 | Add the zuchinni & toss for 1 minute to warm. |
5 | Add the eggs, butter, cream, & herbs toss for 1 minute |
6 | Garnish with parmesan & serve! |
