CHOC MINT CHRISTMAS BALLS
INGREDIENTS:
• 1 Packet Chocolate Mint Slice Biscuits
• 1 Peppermint Crisp (optional)
• 125g Cream Cheese
• 150g Cadbury milk chocolate
• Red Mini M&Ms
• 1 packet Allen’s Spearmint Leaves
METHOD
Place Mint Slice & Peppermint crisp into Food Processor. Press AUTO & run for approx. 30 seconds, or until finely chopped. Add Cream Cheese. Mix until combined.
Roll the mixture into 20g balls. Place them on a baking tray lined with baking paper. Place in the fridge for an hour to set.
Place the metal bowl on to the Cook Expert base. Add chocolate. Set to EXPERT 5min/ speed 3/ 50 degrees to melt.
Roll the balls in the melted chocolate, place back on lined baking tray. Decorate with slices of spearmint leaves & 1 red M&M.
OPTION: Use Tim Tams with the cream cheese. Decorate with a mini M&M & sprinkle with coconut.
ROCKY ROAD
INGREDIENTS
• 360g Block Cadbury Milk Chocolate
• 4 Scotch Finger Biscuits, broken into small pieces
• Allens Raspberries, cut in half
• Marshmallows, cut in half
METHOD
Melt chocolate in metal bowl. EXPERT 5min/ speed 3/ 5min
Add remaining ingredients into chocolate. Stir to combine.
Pour into desired mold & refrigerate till set.
Slice, Serve & Enjoy!
OPTIONS: You can place anything your heart desires into Rocky Road. Try adding nuts, diced Cherry Ripe, broken up Crunchie bars, the list is endless!!
CHOCOLATE CHIP COOKIES
INGREDIENTS
• 180g Dark Brown Sugar
• 90g butter
• 1 egg
• 1 tsp vanilla extract
• 250g Self Raising Flour
• ½ tsp bicarb soda
• 150g dark chocolate chips
METHOD
Cream butter & sugar in the food processor main bowl with the main blade fitted.
Add egg & vanilla extract & combine.
Add sifted flour & bicarb, mix in the food processor until combined.
Add choc chips & gently combine.
Roll golf ball sized balls & place on a lined baking tray.
Place in oven, 180 degrees, for 10 minutes.
If you want flat biscuits, press down with a fork before baking.
TOMATO RELISH
INGREDIENTS
• 1kg ripe tomatoes
• 500g brown onions
• 180g Raw Sugar
• 200g Apple Cider Vinegar
• 1 Tbsp Curry Powder
• 2 tsp mustard powder
• 2 tsp salt
• 3 Tbsp Corn Flour
METHOD
Add onions to metal bowl. Pulse to chop. Scrape down sides & repeat in necessary.
Add tomatoes. EXPERT 20 seconds/ speed 13.
Add remaining ingredients to the bowl. EXPERT 30min/ Speed 3/ 100 degrees.
Serve with ham, or delicious with a cheese platter.
