400 ml milk

25 g butter

1 split and scraped vanilla pod

250 g sugar

2 egg yolks

1 egg

125 g plain flour

150 ml rum

RECIPE STEPS

Bring the milk, butter and vanilla bean to a boil. Leave to infuse for 15 minutes.

  • 1 split and scraped vanilla pod

Mix the sugar, egg yolks and whole eggs in the bowl fitted with the dough hook. Pour in the flour and turn the dough hook.
  • 250 g sugar
  • 2 egg yolks
  • 1 egg
  • 125 g plain flour

Pour in the filtered milk and the rum then continue to mix. The mixture should be smooth.

  • 150 ml rum

Pour the mixture into a large bowl and cover with cling film (make sure that it is touching the dough). Set aside for 12 hours in the fridge.

After this resting time, preheat the oven to 200°C. Mix the dough vigorously with a whisk then fill the cannelé molds to 3/4 full. Bake for 1 hour.
