200 g of caster sugar

200 ml d'eau

20 ml of lemon juice

7 of ripe white peaches (1 kg)

125 ml of cava

100 ml d'eau

RECIPE STEPS

Add the sugar and the water into a saucepan and bring to a boil while stirring until the sugar has dissolved (approx. 2 minutes). Leave it to cool completely.
  • 200 g of caster sugar
  • 200 ml d'eau

Wash the peaches and then cut the unpeeled peaches in quarters and remove the stone (pit).
  • 7 of ripe white peaches (1 kg)

Using a Juice extractor, blender or food processor, extract or blend the white peaches adding the remaining water to the peaches being blended or the juice extracted. (Yield approx. 700ml)

Combine the sugar syrup with the blended peaches, add lemon juice and refrigerate until completely cold (3 to 4 hours). When cold, add the 125 ml of Sparkling White Wine and whisk all together.

Turn on the Gelato Expert and let the bowl freeze for 5 minutes.

Pour the cold peach mixture into the machine and select SORBET/ GRANITA mode.

When the light flashes, your Peach Melba granita is ready.

Serve immediately with Vanilla Gelato or freeze until ready to use.
