Tomato Soup




2 tbsp olive oil
1 large onion
2 medium carrots, roughly chopped
1 kg tomatoes, roughly chopped
230 ml water
2 tbsp castor sugar
2 tbsp fresh vegetable stock, or 2 stock cubes
1 pinch salt
1 pinch white pepper
12 leaves basil
1 pinch cayenne pepper
125 ml of crème fraîche

This soup is so easy and yummy. Small tip though, only use a pinch of Cayenne Pepper like the recipe says. Don't add extra unless you like it hot. 😂
Delicious! I added half a capsicum, and I omitted the sugar. Quick and easy and you use whole tomatoes. Don’t have to seed or remove the skin its even easier. Try it. You’ll love it.

I loved this recipe. I purchased the cheapest ripe tomatoes I could find and followed the recipe. I would make this soup again.
didn’t have carrots, cream or basil and used a drizzle of honey instead of sugar however this soup was absolutely delicious and I will definitely make this again.
