
Vanilla custard




20 g plain flour
2 vanilla pods
20 g butter
500 ml of hot milk
6 egg yolks
75 g of sugar
30 g cornflour

The milk should be at room temperature. If the milk is cold, use the microwave to heat it for a couple of seconds.

I made 2 changes to this recipe. 1. I heated the milk in the cook expert at 85C for 5 minutes. 2. I replaced the vanilla with the zest of a lemon and a lime and some freshly grated ginger. I was trying to recreate and amazing lemon, lime and ginger custard I had once. The custard looks OK but there's burnt residue on the bottom of the bowl. Also currently my flavours seem very mild. So next time I will be much more careful about heating the milk and may add lemon and lime juice as it thickens.
