1 aubergine

1 garlic clove

2 tbsp olive oil

1 tbsp lemon juice

1 pinch sea salt

Tips

Sprinkle with chopped black olives and serve with slices of toasted country bread.

RECIPE STEPS

Preheat the oven to 180°C (gas mark 4). Wash and dry the aubergine, then prick it with a fork.

Place the aubergine in an oven dish lined with sea salt. Cook for about 45 minutes until the skin is wilted and the flesh tender.

Halve the clove of garlic. Halve the aubergine and remove the pulp with a spoon.

Roughly chop the aubergine and add it to the mini bowl, along with the garlic. Add the other ingredients. Run the machine for about 30 seconds until the mix is homogenous.
