1 vanilla pod

5 egg yolks

40 g caster sugar

50 g brown sugar

0.5 L double cream

25 g cornflour

RECIPE STEPS

Soak the gelatine leaves in cold water for 5 minutes to soften.

Squeeze the excess water from the gelatin and put them in the metal bowl. Split the vanilla pod in half and collect the seeds. Put the vanilla seeds into the bowl with the rest of the ingredients. Run the program.

Pour the cream into ramekins.

Cool at room temperature, then refrigerate for 2-4 hours.

Just before serving sprinkle the top of the vanilla cream with brown sugar; caramelise using a blowtorch, or under a preheated grill.
