
Mashed potato with truffle and parmesan




1 kg peeled floury potatoes
1 pinch salt
1 pinch pepper
50 g grated parmesan
50 g butter
100 ml milk
1 tsp black truffle

The weight for the recipe relates to the peeled potatoes. The variety of potatoes is essential. Agata, Bintje or Maris piper potatoes are a great choice to make mashed potatoes. The cooking time varies according to the variety of potato. If fresh truffles are unavailable, replace with approx. 1 tsp of truffle oil.
