Peel and slice the potatoes. Peel and finely chop the onions and garlic. Cut the meat into cubes.

Preheat the cocotte on high heat on a stove with a drizzle of olive oil, without the lid. As soon as the cocotte is hot, place the meat in it and cook for 15 minutes, stirring regularly with a wooden spoon.

Add 2 tablespoons of olive oil, the onions, garlic cloves, potatoes, and herbs. Continue cooking for 10 minutes, stirring occasionally.
