1 sachet of dried yeast (5 g)

190 ml of warm water

345 g of strong bread flour

5 g of salt

30 g of black treacle

10 g of sugar

0.5 L of water

50 g of bicarbonate of soda

1 tsp of salt

1 egg white

1 tsp of seasame seeds

Tips

Sprinkle the bagels with poppy, flax or pumpkin seeds.

RECIPE STEPS

Add the yeast in the warm water and stir for 5 minutes or until fully dissolved. Leave to rest for 10 minutes.

Add the flour, salt, black treacle, sugar and yeast mixture into the bowl fitted with the dough hook. Switch on the machine and run for about 30 seconds until the dough has formed a ball.

Flour your hands, remove the dough from the bowl and place it in a new bowl covered with clingfilm. Leave to rise for 1 hour 30 minutes.

Divide the dough into 4 and shape into balls. Using your fingers, press down into the centre of the ball and carefully stretch the dough into a ring.

Transfer the dough to a baking tray lined with baking parchment. Leave them to rise covered with a dry cloth, for 1 hour at room temperature and away from drafts.

Preheat your oven to 220°C. Boil 0.5 L of water in a saucepan, then add the baking soda and salt.

Poach the bagels one at a time by dipping them into the pan. Take them out as soon as they come to the surface of the water and return them onto the baking tray.

Brush them with the lightly beaten egg white and sprinkle over sesame seeds. Bake for 25 minutes.
