Whisk, butter paddles or spatulas

180 ml double cream

150 g icing sugar

3 tbsp of french brandy, Cognac

RECIPE STEPS

1. Fit the whisk to the main bowl then add the double cream. Press AUTO and allow the cream to churn and separate into butter and buttermilk, approx 5 minutes.

2. Once separated press STOP and drain off the buttermilk and remove the butter from the bowl.

3. Using butter paddles or spatulas, pat the butter to remove the whey and wipe away any excess with kitchen roll.

4. Fit the main blade to the main bowl and add the butter and icing sugar. Remove the middle feedtube then press AUTO, blend until light and creamy then slowly pour in the brandy through the feedtube. Once fully combined, remove the butter to a dish and serve with Christmas Pudding.
