2 cm piece of fresh ginger

1 small shallot

2 cloves garlic

1 tsp red curry paste

1 kg carrots, peeled & roughly chopped

400 g can coconut milk

470 ml water

1 fresh vegetable stock, or a stock cube

1 tsp fish sauce

Place ginger, shallot & garlic into metal bowl. Pulse. Scrape sides & repeat.
