80 g ghee

4 shallots, finely chopped

4 garlic cloves, finely chopped

0.5 red onion, chopped

10 curry leaves

1 leaf bay leaf

1 long green chilli, chopped

1 long red chilli, chopped

5 cardamom pods

2 tsp ground cumin

2 tsp ground paprika

1 tsp ground ginger

1 tsp ground turmeric

2 tsp curry powder

750 ml chicken stock

4 chicken thighs

200 g cauliflower

270 ml coconut cream

1 mango, mango peeled and coarsely chopped

0.5 red onion, diced

2 limes, juiced

115 g bunch of garlic chives

1 long red chilli, diced

1 long green chilli, diced

1 tsp of seasame seeds

1 tbsp olive oil

1 tsp salt, or to taste

RECIPE STEPS

Add onion, garlic, ghee, spices, curry leaves, bay leaf, cardamom, cloves and chillies in the XL bowl.

Select Expert Mode, blade to 3, temperature to 140C and time to 3 minutes.

Separately coat the chicken with curry powder, salt and pepper.

Add chicken, coconut cream and stock into the bowl and set the blade to 1A speed, temperature to 100C and time to 30 minutes.

Once done , mix all the salsa ingredients together in a bowl and serve with the curry.
