500 g chicken liver

1 onion, diced

1 garlic cloves

1 tbsp of french brandy, Cognac

1 pinch salt

1 pinch pepper

200 g butter

In a medium saucepan, combine the chicken livers and onion. Fry in butter until the livers are barely pink inside, about 3 minutes. Remove from the heat and let stand, covered, for 5 minutes.

Transfer the cooked liver in the main bowl of your food processor. Add garlic cloves, sherry/cognac and season with salt and pepper. Press AUTO and run until your desired consistency is achieved.

Place in container and top with melted butter. Refrigerate.
