8 chicken thighs

2 onions

2 tbsp of olive oil

2 garlic cloves

3 sprigs of thyme

1.5 lemon

120 g green olives

300 ml of water

1 chicken stock cube

1 pinch of espelette pepper

1 pinch of salt

1 pinch of pepper

In the cocotte on high heat, brown the chicken in 1 tbsp. of olive oil. Season with salt and pepper. Set aside.

Slice the onions and garlic and then sauté in the cocotte still placed on the stove, over medium heat with the rest of the olive oil. Season with salt and pepper.

When the onions are golden, add the chicken, olives and a lemon cut into 8.

Squeeze the juice from the remaining half lemon and pour into the cocotte with the water. Crumble the bouillon cube and add a pinch of Espelette pepper.
