200 ml water

75 g melted butter

1 tbsp sugar

150 g plain flour

4 eggs

1 egg yolk

Preheat your oven to 180 °C (gas mark 4). Pour the water, diced butter and the sugar into a saucepan. Bring to the boil. Remove from the heat and add the flour all in one go. Beat in vigorously with a spatula.

  • 75 g melted butter
  • 1 tbsp sugar
  • 150 g plain flour

Return to the heat for about 1 minute, stirring constantly. The dough should not stick to the side of the pan.

Remove from the heat and transfer the dough to the bowl with the dough hook. Run the machine for 15 seconds, then add the eggs one at a time via the feed-tube.

Run for a further 30 seconds.

Using a pastry bag, pipe about 15 balls of choux pastry onto a baking tray covered with baking paper.

Brush the pastry with egg yolk. Bake for 20 minutes then 10 minutes at 160°C.
