RECIPE STEPS

Put the ingredients into the metal bowl and run the program.
- 400 g plain flour
- 1 pinch salt
- 4 eggs

When the program has stopped, push the dough down into centre and run program again.

The dough must be elastic but not sticky.
If it is sticky, add a little flour. If it is too dry, add a little water or a teaspoon of olive oil.
- 1 tbsp extra virgin olive oil (if necessary)

Form dough into a ball and wrap tightly with plastic film. Refrigerate for 30 minutes.

Divide the dough into 3 or 4 parts and pass them through a pasta roller until the desired thickness and shape are obtained.
If you don' have a pasta roller, go to the next step.

Work the dough with a rolling pin to spread it out finely, folding it over on itself several times.

When it is very fine, put it on a floured cutting board and cut your desired pasta shape (e.g. lasagna, tagliatelle).

Place the pasta on a drier, or a lightly floured cloth, until needed.
