RECIPE STEPS

To make the gelato base, combine the egg yolks, icing sugar, milk, single cream and vanilla in a pan. Cook on a low heat, stirring continuously. When the mixture coats the back of a spoon, remove it from the heat and allow to cool to room temperature.
- 4 Egg yolks
- 150 g Icing sugar
- 300 ml Whole milk
- 150 ml Single cream
- 1 tbsp Vanilla extract or vanilla bean paste

Once the gelato base has cooled, place in the fridge overnight.

To churn the gelato, turn the Gelato Expert on and press the gelato button to start turning the paddle. Pour in the gelato base and leave to churn. When the programme has finished (around 20 minutes), the light will start flashing.

Add the chocolate in and press the gelato button again. When the light starts to flash again, the gelato is ready to serve. Enjoy!
