300 ml of whole milk

170 g of honey

4 egg yolks

85 g of goats cheese

300 ml of double cream

RECIPE STEPS

Start by heating the milk and honey in a saucepan. Do not allow it to boil.
  • 300 ml of whole milk
  • 170 g of honey

Meanwhile separate four egg yolks into a large mixing bowl.

Add the hot milk to the egg yolks whilst continuously stirring.

Then add the mixture back to the saucepan and continuously stir.

Strain the custard mixture into a jug and set aside.

Now soften the goat’s cheese by whisking it. Then add the cream and the custard mixture.
  • 85 g of goats cheese
  • 300 ml of double cream

Chill in the fridge overnight.

Using the gelato function on the Gelato Expert, pour the gelato base in.

When the light starts to flash, the gelato is ready to serve. This is lovely served with roasted figs and an extra drizzle of honey.
