175 g mascarpone

175 g ricotta

250 ml double cream

25 g sugar

16 sponge fingers

2 zest lemon

2 lemon

125 ml water

110 g caster sugar

1 tbsp limoncello liqueur

Tips

The syrup will easily keep for 3 months in the refrigerator in an airtight sealed container. Make all sorts of syrup by replacing the lemon with the ingredient of your choice: orange zest and orange juice, ginger, star anise, cinnamon, coffee beans, rosemary, liqueur, etc.

Juice and zest the lemon. Add the lemon juice, zest and the other ingredients into the metal bowl. Run the program.

Once the syrup has chilled, filter it through a sieve. Add the limoncello and mix.

Refrigerate the syrup.

Rinse the metal bowl then add the ingredients (set aside some lemon zest for decoration). Run the program.

Set aside the whipped cream. Soak half of the sponge fingers in the lemon syrup. Arrange the sponge fingers at the bottom of the 16 x 25 cm dish.

Cover with half the cream mixture then repeat with the remaining ingredients.

Refrigerate for at least 2 hours.

Sprinkle with the remaining lemon zest just before serving.
