1 onion

2 cloves garlic

1 tbsp olive oil

500 g beef mince

1 red chilli, finely chopped

400 g of tomato purée

15 tsp packet taco seasoning, or Mexican seasoning of choice

400 g red kidney beans, rinsed

1 red chilli, deseed & roughly chop

0.5 red onion

5 g coriander, or to taste

5 g fresh mint, or to taste

2 medium tomatoes, quartered & deseeded

1 lebanese cucumber, cut long ways, deseed, cut into 5cm pieces

0.5 red capsicum

1 tsp lime juice

Place chilli, red onion, coriander & mint into large FP bowl with blade. Pulse for 5 sec, scrape & repeat if required.
