The day before, desalt the cod by placing it in a large container of water and changing the water as often as possible.

On the same day, peel and slice the onions, garlic and shallots. Remove the seeds from the peppers and then cut them into strips. Cut the tomatoes into quarters. Peel the fennel and then cut it into thin slices. Peel the potatoes and slice them.

Preheat the cocotte on high heat on a stove with a drizzle of olive oil, without the lid. As soon as the cocotte is hot, place the shallots, garlic, onions, fennel and peppers in it and cook for 10 minutes, stirring regularly with a wooden spoon.

Add the tomatoes, potatoes, thyme, salt, pepper, and pour 250 ml of water. Bring to a boil.

After boiling, remove the cocotte from the stove and place it on its pre-installed stand on the Cook Expert. Add the cod. Cover and run the program.
