1 tbsp of lemon juice

400 g of frozen peach

1 egg white

75 g of powdered sugar

200 ml of water

0.5 tsp of agar agar

Tips

Not straining the peach pulp gives the sorbet a chewy texture.

RECIPE STEPS

Finely chop the peaches in the blender.
  • 400 g of frozen peach

Mix the agar-agar with 25 g of sugar.
  • 75 g of powdered sugar
  • 0.5 tsp of agar agar

Heat the water and the rest of the sugar to 45/50 °C, incorporate the agar-agar and bring to a boil while whisking.

Let the syrup cool completely, pour it over the peach puree Add the egg white; the lemon juice and whisk. Cover with cling film and refrigerate for 2 hours.

Pour the "mix" into the ice cream maker's bowl and proceed in Artisanal Ice Cream mode.

Serve immediately in delicate quenelles or reserve in the preservative at -15 °C.
