If you prefer your pesto a little less “wet”, I recommend use 20% less oil.
I love making pesto in my Magimix. can I suggest a change in the steps. I take a chunk of Parmesan cheese and blitz it first with the metal blade while the pine nuts and unpeeled garlic cloves are roasting in the microwave. Then add all other ingredients except oil - ensuring pine nuts are cooled. garlic should be a soft paste. pulse several times and the pour in olive oil.
