250 ml oil

1 tbsp strong mustard

2 garlic clove

1 egg yolk

1 tbsp of tomato purée

1 g powdered saffron

1 pinch Cayenne pepper

Tips

You can substitute saffron with paprika. Delicious served with Mediterranean fish stew (bouillabaisse), fried fish, poached fish or fish soup.

Follow Magimix's mayonnaise recipe to make the mayonnaise. Add the garlic, saffron and Cayenne pepper.

  • 1 tbsp strong mustard

Add the tomato purée and pulse a few times before turning on for 20 seconds to obtain a smooth sauce.
