Salmon ceviche




240 g fresh sashimi grade salmon, skin off
1 lemon juice
3 tbsp fresh coriander, roughly chopped
1 spring onion, finely chopped
30 g olive oil
1 red chilli, finely chopped
1 tsp sea salt
3 g Cracked black pepper
1 large bulb fennel, halved and finely sliced using your MAGIMIX FOOD PROCESSOR with the 2mm blade (approximately 275g)
200 ml apple cider vinegar
240 ml water
1 tsp sugar
1 tsp salt
0.5 tsp fennel seeds
1 g yellow mustard seeds
0.5 tsp black peppercorns
65 g salmon caviar
