450 g of sweet potato

175 ml of dry white wine

1 garlic clove

1 tbsp of Dijon mustard

1 handful of flat-leaf parsley

1 pinch of salt

1 pinch of black pepper

2 tbsp of butter

1 tbsp of olive oil

4 tbsp of crème fraîche

450 g of mushrooms

Trim the sweet potato to fit into the feed tube.

Install the transparent bowl, the Spiral Expert and its Spaghetti Cone.

Spiralize using the SPAGHETTI cone. Cut into shorter lengths.

Heat the olive oil in a large non-stick pan over medium heat and cook the sweet potato spaghetti for 10 minutes; turn occasionally until tender.

Melt the butter in a large frying pan over medium-high heat.

When foamy, add the mushrooms, season and sauté for 5 minutes until softened and golden brown.

Stir in the garlic; cook for 1 minute.

Add the wine and simmer for 1 minute.

Push the mushrooms to one side of the pan, and put the mustard on the other side.

Turn off the heat, put the crème fraîche in the centre of the pan and gently stir the mushroom mixture and mustard into it.

Spoon the mushroom stroganoff over the sweet potato spaghetti; sprinkle with parsley.
