50 g butter

400 g leeks, cleaned and thinly sliced

3 medium potatoes, sliced and cut into dice

500 ml chicken stock

350 ml thickened cream

32 g freshly chopped chives

32 g freshly chopped flat leafed parsley

1 pinch ground nutmeg

RECIPE STEPS

In a large heavy-based pot, melt the butter gently and add the leeks. Cook for 5 minutes, stirring occasionally and ensuring they don’t colour. Add the diced potato and nutmeg and cook for a further 5 minutes, stirring occasionally.

Add the chicken stock and bring to the boil. Reduce to a simmer and cook for 20 minutes. Add the cream and simmer and reduce for a further 20 minutes – by this time the potatoes should be soft.

Pour the hot soup into the Magimix POWER BLENDER 5XL, add the chives and blend until smooth. Season well.

Pour out into 4 bowls, top with some freshly chopped parsley and serve with warm crusty baguette.
