50 g of egg white

300 g of honey

100 g of sugar

200 g of almonds

80 g of hazelnuts

80 g of pistachios

RECIPE STEPS

Install the whisk in the metal bowl and add the egg whites. Remove the cap and run the program.

Leave the beater, add the sugar and honey (always with the cap open) and run the program.

Roast the almonds, hazelnuts, and pistachios in the oven at 220°. Add the dried fruits and run the program again.

Pour the mixture onto a parchment paper dusted with powdered sugar and form a square about 1.5cm thick, or about 20cm on each side. Smooth the surface by dusting your hands with powdered sugar (to prevent it from sticking too much). Let it dry at room temperature for about 4 hours. Cut the squares. Let it dry for a few more hours.

Very tasty, but mine came out quite soft. I would assume it needed a longer heating time???

Response from the Magimix team: Glad you enjoyed the flavour! Nougat firmness is controlled by sugar temperature — for a firmer result, cook the sugar a few degrees higher. If you're using the Cook Expert, you can set the exact temperature for precise control.
