40 g fresh basil leaves

50 g macadamia nuts

50 g Nutritional Yeast flakes (non-dairy Parmesan cheese)

2 cloves garlic

50 ml olive oil

1 zest Zest Lemon

20 ml Lemon juice (half lemon)

300 g fettuccine pasta (fresh or dried)

300 g Cauliflower (cut florets)

1.5 L hot kettle of water

Main bowl with the blade – Macadamia nuts (or other nuts of your choice, Nutritional Yeast Flakes (non-dairy cheese) and garlic – Pulse until desired texture – 8 seconds
  • 50 g macadamia nuts
  • 2 cloves garlic

Add the Basil, salt, and pepper into the bowl and Pulse again and then add the oil and lemon juice. Select auto and continue to process until your desired texture is achieved. Set aside.

Metal bowl – add hot boiled kettle water into the metal bowl.
  • 1.5 L hot kettle of water

Add 2 tablespoons of salt (adjust to your taste) and place the cauliflower which has been chopped up into pieces into the boiling water. Select Expert 8 minutes/0 speed/120°C.
  • 300 g Cauliflower (cut florets)

Add pasta of your choice fresh or dried with the cauliflower already into the metal bowl. Expert 5 minutes/1A/120°C

Let it sit for 3 minutes (this allows the pasta to continue to cook using the thermal heat from the bowl)

Reserve a cup of pasta cooking water and set aside. Drain the cauliflower and pasta add into a large bowl and add the pesto and mix it through you may need to add the reserved cooking water until it is creamy.

Add the fresh zest of a lemon and sprinkle some Nutritional Yeast flakes or Non-Dairy Cheese on top and serve it with a side salad or herbed garlic bread made with non-dairy spread.
