200 g dark chocolate

50 g sugar

Separate the egg whites from the yolks (keep them both). Add the egg whites into the bowl fitted with the whisk.

Whisk for about 5 minutes, remembering to remove the pusher. Once the egg whites have stiffened, gradually add the sugar through the opening. Set aside.
  • 50 g sugar

Meanwhile, melt the chocolate over a low heat in a bain marie.

Using a spatula, combine the egg yolks with the melted chocolate.

Gently fold the egg whites into the previous mixture, using the spatula.

Transfer the mousse mixture into verrines or small glasses. Refrigerate for at least 3 hours.
