1 cauliflower

200 ml of crème fraîche

0.5 tsp ground nutmeg

100 g lardons or diced bacon

Wash the cauliflower and separate into florets. Pour the water into a thick-bottomed pan. Add the cauliflower, cover with a lid and cook for about 30 minutes.

Meanwhile, fry the bacon in a frying pan. Blend the bacon in the food processing bowl fitted with the metal blade and the Blendermix.

While the machine is still running, add the cauliflower and a little of the cooking liquid.

Once the cauliflower has been reduced to a smooth purée, add the cream, nutmeg, salt and pepper.

Adjust the seasoning, if necessary. Serve piping hot.
