100 g dark chocolate

3 egg yolks

100 g icing sugar

40 cl of crème fraîche

RECIPE STEPS

Fit the food processing bowl with the whisk. Whip the very cold double cream with 50 g of icing sugar to obtain a firm whipped cream.
  • 100 g icing sugar
  • 40 cl of crème fraîche

Break the dark chocolate into pieces and add to a saucepan. Add 3tbsp water.

Melt the chocolate until you obtain a smooth consistency.

Mix the egg yolks with the rest of the icing sugar, in the mini bowl, until you obtain a smooth consistency. Add the chocolate and rerun the machine.

In a bowl, gently mix the whipped cream and the chocolate mixture. Pour into a rectangular freezer-safe mold. Leave to set in the freezer for 3 hours.

Marvellous! Turned out great, I put in a cool mould and guests loved shape and the taste of the log even more. Very easy to create a show stopper that taste good too
